Somedays when things just don't go your way ... all day and baby was up four time the night before and coffee just isn't touching the level of exhaustion you are at and you just want comfort food but you are so close to wrapping up your current challenge and you just want ABS ;)
This was my predicament last week! I know clean eating like the back of my hand and I got really food at eye balling my portions after 1.5 years of using the container system. After the holidays and visitors in town and despite my hard work I wasn't feeling like my results were adding up and I knew it had a lot to do with me getting away from actually using the containers to measure my food. So I will be sharing more recipes lately that are my family favorites, so YES kid and waist friendly.
I didn't have a recipe per say to follow but this is how I threw it together.
Chicken Breasts (cut in half to be thinner)
Eggs (beat to dip chicken in)
Whole Wheat Panko Crumbs (to bread after you dip in eggs)
Mozzarella Cheese (costco has pre sliced)
After you slice your chicken in half, dip in beaten eggs, and then dip in bread crumbs. Bake at 350 for 20-30 minutes. Once chicken is done, top with Mozzarela Cheese until cheese is melted.
While baking your chicken cook up your 100% Whole Wheat pasta (about 11 minutes) and top with homemade marinara sauce. I use the Fixate Pasta Sauce but you can use any homemade organic or clean eating marinara.
