Hello Fall ... kind of ... not really. It is still 102 here in Arizona but it's September and my Pinterest is full of fun fall outfits and decor and the aroma of banana bread is filling my house. So I am going to live in this moment and pretend it isn't blaring hot outside.
We all know as soon as Sept. 1 hits it's pumpkin spice everything and the colors in the stores turn different shades of orange and brown. Listen I am a summer girl through and through but with my kids in year round school and my husbands not so traditional schedule this is the time of year my gypsy soul takes over and I am itching to get out of the desert.
I am just blabbering now so I will get to my point. My son's bff LOVES banana bread, my son USED to love all things banana, it was the only food he would eat for the longest time, however in the past three years I can count on one hand how many banana's I have seen him touch. Alas, he found a friend that loves banana bread and he tried some at his house because we all know kids are much more compliant when at others homes. So at his request (HALLELUJAH) we are making banana bread. I am however gambling ... I am not making traditional banana bread because lets be real, I don't have all the ingredients, the baby is napping, and I am avoiding the grocery store for at least two more days! So that being said I am whipping up a "clean eating" version of banana bread. I am sorta winging it ... so bare with me. If you know me you know I live for taking recipes and making them clean just to see if it can be done!!
Here is the recipe I used.
Clean Eating Banana Bread
3 Ripe Bananas
1 tspn vanilla
1 tspn baking soda
1.5 c oats
1/4 c honey/maple syrup
Bake at 350 for 45 min
1 tspn cinnamon
We have tried other recipes that I am sure to most at probably good but I despise greek yogurt, I have tried a hundred times to like it and it just isn't happening. If you do however there are many great recipes to make moist and cleaner versions using that and or apple sauce and whole wheat flour etc.
We are not a "gluten free" family however we have found we just function and feel better when we limit gluten and choose whole grains or whole wheat.
